Research abstract

First responders, such as firefighters and paramedics, often work in high-stress environments with limited access to fresh, balanced meals, leading to decreased performance and health risks. Inspired by NASA's advancements in space nutrition, this project aims to develop ReadyBAR, a shelf-stable meal replacement bar designed to provide balanced nutrition with less than 10% of calories from sugar and a two-year shelf life. Using cutting-edge methods, including the stabilization of omega-3 fatty acids with Vitamin E and the preservation of texture and safety with sodium tripolyphosphate, the project will produce and validate prototypes under simulated storage conditions. ReadyBAR will enhance the health and performance of first responders while advancing shelf-stable food technology, with broader benefits for disaster preparedness and food security.
