Research abstract

This project addresses two critical challenges: the rising prevalence of chronic health conditions such as obesity and diabetes linked to high-sugar and low-fruit/vegetable diets, and the significant food waste generated in traditional fruit juice production. According to the CDC, only 1 in 10 American adults meets the daily recommended intake of fruits and vegetables. This dietary gap contributes to poor health outcomes and increases healthcare costs. Conventional juices often discard nutrient-rich components of fruits, like the peels and pulp, leaving consumers with high-sugar, low-nutrition beverages. Starting with apples but adaptable to other fresh produce, this project is designed to provide a whole-fruit/vegetable-basedbeverage that retains most of the nutrients and bioactive compounds while reducing food waste. This convenient, grab-and-go solution aims to increase whole fruit and vegetable intake among Americans, promoting better health and more balanced diets. To achieve this, the project employs cutting-edge food processing technology that uses high-pressure techniques exceeding 100 MPa. This immense force, equivalent to the weight of several elephants on a single postage stamp, breaks down apples, including their peels and pulp, into ultra-fine particles as small as tens of microns--much smaller than a human hair. This process not only ensures a smooth, creamy texture but also preserves essential nutrients such as fiber, antioxidants, and vitamins that are typically lost in traditional juice production. The social benefits of this project are profound. By offering a healthier, low-sugar beverage alternative, our first product "Liquid Apples" aims to help children and families reduce their consumption of sugary juices, promoting better dietary habits and reducing the risk of chronic health conditions. Additionally, the project supports efficiency by utilizing all edible partsof the apple, including the peel and pulp, significantly reducing food waste.Through outreach efforts, such as educational campaigns and a dedicated website, the project will inform consumers about the advantages of whole-fruit nutrition and the environmental impact of reducing food waste.
