Research abstract

OPO is a fat in high concentration in human breastmilk with few other natural sources. This fat type is highly digestible by infants and important for their early stage development. The goal of thei sproject is to convert readily availableoils and fats into human milkfat replacement for infant formula creation. Using immobilized enzyme techniques, the project aims to reduce the cost of creating this necessary nutritional factor for infant formula creation.
